There is so much more to pumpkin, especially in the winter, than just the good old soup. They store well, come in many varieties and are perfect for refreshing winter juice.
It takes a little time to prep the ingredients for this juice but it's worth it!!! The flavour is slightly sweet and really well balanced. It's easy to drink and very hydrating.

Ingredients
  

  • 1/2 pumpkin japanese
  • 2 oranges
  • 1 red apple
  • 3 stalks celery
  • 1 red capsicum
  • 1 tsp cinnamon

Preparation

Pumpkin
  • Cut into thick slices
  • Remove skin and seeds 
  • Cut into large chunks
Oranges
  • Remove the orange skin leaving as much white pith as possible
  • Juice whole or cut in half if too big to fit into the wide chute
Apple
  • Remove the stems and remove any stickers
  • Juice apples whole with skin and seeds.
  • Cut in half or quarters if too big to fit into the wide chute.
Capsicum
  • Remove the green stems
  • Cut into halves or quarters to fit in the wide chute
  • Remove excess seeds (you can juice them
Celery
  • Chop into small thumb size pieces across the stalks (this shortens the long stringy cellulose fibre and stops it wrapping around the press)
  • You can juice celery leaves, however it will add bitterness, so discard if you don’t like this

Instructions
 

  • I started making this juice with the pumpkin pieces. Take your time and let each piece press through the cold press juicer before adding more pieces. 
  • Next add the oranges. Just pop them in whole, one at a time. The orange flesh really helps push through the previous pumpkin pieces which are quiet fibrous.
  • Then I added the whole apple followed by the capsicum quarters one at a time.
  • Next juice the celery pieces. I add one big handful at a time when juicing celery.
  • After making the juice stir in about 1 tsp of cinnamon for extra flavour. 
  • Tip:  Use a sturdy knife when cutting pumpkins. I cut in quarters first, then thinly slice off the top and bottom before cutting into slices. Once sliced I trim off the skin and remove the seeds.
