Winter is a great time of the year to be juicing. There is an abundance of root vegetables that contain plenty of nutrition from growing deep in mother earth.
This juice combination is very drinkable. It has enough sweetness to balance out the peppery taste of the turnip and swede flavour. There is also a wonderful aromatic smell from this juice.

Ingredients
  

  • 6 carrots
  • 2 beetroot
  • 1 turnip
  • 2 parsnips
  • 1 swede
  • 1 piece 2cm ginger

Preparation

Carrots
  • Cut carrots lengthwise
  • Juice with skin on
  • Note: If larger carrots are used cut lengthwise again, into quarters
Beetroot
  • Cut in half and then into quarters
  • Slice each half into thin slices to make it easier to press
  • Juice with skin on (you can also juice the leaves and stems if you have them
Turnip
  • Cut in half and then into quarters
  • Slice each half into thin slices to make it easier to press
  • Juice with skin on
  • If in good condition, the leaves can be also be juiced
Swede
  • Cut in half and then into quarters
  • Slice each half into thin slices to make it easier to press
  • Juice with skin on
Parsnip
  • Cut parsnip lengthwise like carrots
  • Juice with skin on
Ginger
  • Cut off a 2cm thick piece
  • Cut into thin slices leaving the skin on

Instructions
 

  • Root vegetables need to be prepared well so that they easily press through the cold press juicing machine. Follow the preparation guide above and take your time feeding through the juicer.
  • Start with the carrots. Add one half at a time letting the juicier press it before adding the next half.
  • Next juice the beetroot. I add about 1/4 of the slices at a time and wait until they are pressed before adding more.
  • Do the same for the turnip and the swede adding about 1/4 at a time and waiting before adding more.
  • Finish with the parsnips. They are like carrots so just add half at a time.
  • Tip:  Some gardeners leave parsnips in the ground over the winter observing that parsnips dug up the following spring are the sweetest.
