The trick to a good tasting veggie juice is getting the balance of flavours just right so it’s not too bitter. This juice is just perfect which is why I named it veggie-licious, as in delicious veggies.
The taste is refreshing and hydrating with a nice sweetness. It has a little tang from the lime and the fresh tomato teams nicely with the basil to make it taste amazing.

Ingredients
  

  • 4 large Tomatoes
  • 1 Cucumber
  • 1 stalk Celery
  • 1/2 Red Capsicum
  • 1/2 Lime
  • 1 handful Basil

Optional

  • 1/2 Onion
  • Pinch Sea Salt
  • Pinch Pepper

Preparation

Tomato
  • Remove the green stems
  • Juice whole
Cucumber
  • Cut in chunks to fit down the chute
  • Juice with skin on
Celery
  • Chop into small thumb size pieces across the stalks (this shortens the long stringy cellulose fibre)
  • You can juice celery leaves, however it will add bitterness, so discard if you don’t like it
Capsicum
  • Remove the green stems
  • Cut into halves or quarters to fit in the chute
  • Remove excess seeds
Lime
  • Thinly slice off the outer skin
  • Cut into slices
Basil
  • Remove the leaves from the stalk
Onion
  • Cut into half
  • Peel the outer skin

Instructions
 

  • Add the fresh Basil first, this will coat the inside of the strainer and add more flavour as each ingredient passes through. Grab one handful of leaves and squeeze them into a tight ball then add the ball to the chute.
  • Next add the tomatoes one at a time. Let each tomato push through the juicer before adding the next one. Juice the capsicum next and it will also help push the juice through the soft tomato flesh.
  • Now add the cucumber chunks followed by the celery. Finish with the lime and optional onion if using. I like to stir in some cracked pepper and sea salt into the juice, especially if the juice is all I am having for dinner.
  • Tip: you can use this juice as a cold soup starter at a dinner party. Make it the day before and put into the fridge. Serve it in a small bowl and garnished with basil, chopped cucumber and green onion. To thicken blend the juice with avocado in a blender.
