Are you a veggie juice lover? Do you prefer vegetable juices to fruit juices. If so my V10 vegetable juice is the one for you.
Yes it has 10 ingredients, but surprisingly they all balance well together to create a very easy to drink vegetable juice that has a rich, deep, earthy flavour with a little hint of sweetness.

Ingredients

  • 6 carrots
  • 1 beetroot
  • 3 tomatoes
  • 1/4 head cabbage
  • 2 capsicums - red & green
  • 3 stalks celery
  • 1/4 onion
  • 1/2 clove garlic
  • 2 leaves kale
  • 1 chili pepper

Preparation

Carrots
  • Cut carrots lengthwise
  • Juice with skin on
  • Note: If larger carrots are used cut lengthwise again, into quarters
Beetroot
  • Cut in half and then into quarters
  • Slice each half into thin slices to make it easier to press.
  • Juice with skin on (you can also juice the leaves and stems if you have them).
Tomato
  • Remove the green stems
  • Juice whole
Cabbage
  • Cut into slices about 5cm wide
  • Chop into pieces small enough to fit down the chute
Capsicum
  • Remove the green stems
  • Cut into halves or quarters to fit in the wide chute
  • Remove excess seeds (you can juice them)
Celery
  • Chop into small thumb size pieces across the stalks (this shortens the long stringy cellulose fibre and stops it wrapping around the press)
  • You can juice celery leaves, however it will add bitterness, so discard if you don’t like this
Onion
  • Cut into half, then into quarters
  • No need to peel the outer skin
Garlic
  • Cut one clove into half
  • No need to peel skin
Kale
  • Cut away leaf from the main stalk (you can juice the stalk, but will add bitterness)
  • Roughly chop the leaves
Chili
  • Cut of the stalk end
  • Cut in half lengthways and remove the seeds if you don’t want it too hot, otherwise leave them in and juice whole

Instructions

  • Start with the whole tomatoes. Add them in one at a time letting the soft flesh press through each time.
  • Next juice the capsicums. Pop each piece into the chute and let them press.
  • Now add the carrot halves and remember to take your time with pressing carrots, its a slow cold press juicer for a reason. Don't over feed the machine.
  • Juice the beetroot next, I add a 1/4 of the sliced beetroot at a time.
  • Next add the onion, garlic and chili pepper all at once followed by the cabbage pieces. Cabbage will make a squeaking sound as it gets pressed. Its OK.
  • Finish with the chopped kale leaves and celery slices adding them to the chute one handful of each at a time. You may need to use the pusher with the kale.
  • Tip: go easy with the garlic and onion as they can over power the juice. Make sure you juice the softer tomatoes first before juicing the harder, more fibrous vegetables . They will press much easier when added first!

There is more to every fruit, vegetable and leafy green than taste and flavour. Each one has a unique signature or a "sign from nature" indicating what part of the human body its nutrition targets. The light or the colour of fruits and vegetables can help us heal emotionally (think colour therapy) and the lessons the fruits, vegetables and leafy greens learn when growing get passed onto us, to help us, when we consume them.
