Who loves the colours of Spring? They are so amazing after the dark days of winter. This juice is all about adding bright coloured veggies.
The first thing you notice is the strong herb aroma of the juiced coriander. It adds a refreshing flavour to the juice. The veggies are sweet and peppery with a bit of spicy flavour from the radishes.

  • 1/4 purple cabbage
  • 4 carrots
  • 2 radish
  • 1 red capsicum
  • 1 handful coriander

  • Cut carrots lengthwise
  • Juice with skin on
  • Note: If larger carrots are used cut lengthwise again, into quarters
  • Remove the green stems
  • Cut into halves or quarters to fit in the wide chute
  • Remove excess seeds (you can juice them)
  • Roughly chop leaves and stems (don't use stems if you are not a big fan of the strong taste of coriander)
  • Juice handfuls at a time
  • Cut off the leaves
  • Juice whole (if they are large cut into halves)
Purple Cabbage
  • Cut into slices about 5cm wide
  • Chop into pieces small enough to fit down the chute

  • I started making this juice with the carrots. Add them one half at a time, letting the machine fully press each carrot before adding the next half.
  • Next I added the capsicum including the seeds.
  • Grab all the chopped coriander into one handful and drop it into the chute.
  • Next add all the radish pieces.
  • Finish with the purple cabbage. Go slow and just add a handful at a time. Let the machine press each handful before adding the next one as cabbage is very fibrous.
