You get a lot of fresh juice from peppers or capsicums as we call them in Australia. They are just outright good food for your health. They have very few calories but are packed with nutrients and come in many varied colours.
They surprise you because you can smell the peppery aroma, but the taste is quite sweet. I also like the mint in this juice, it really comes through in the taste and works well with the sweetness of the capsicums.

Ingredients
  

  • 2 Red Capsicums
  • 2 Yellow Capsicums
  • 2 Radishes
  • 1 handful Mint Leaves
  • 2 Carrots

Preparation

Capsicum
  • Remove the green stems
  • Cut into halves or quarters to fit in the wide chute
  • Remove excess seeds (you can juice them)
 
Radish
  • Cut in half and remove leaves (they can be juiced if you like)
  • Juice with skin on
 
Mint
  • Remove the leaves from the woody stems
  • Juice leave whole
 
Carrots
  • Cut carrots lengthwise once
  • If larger carrots are used cut again lengthwise into quarters

Instructions
 

  • This is an easy juice to make in your cold press juicer.
  • Start by juicing the red capsicums followed by the yellow ones.
  • Next add the mint and radishes at the same time.
  • Finish the juice with the carrot halves adding them slowly one half at a time. Let the juicer press each carrot half before adding the next one.
  • Tip: the seeds and white core of the capsicums are edible but add a bitter flavour to the juice which is why I like to remove them.
