This refreshing cold pressed juice is best served by pouring the juice over ice or placing the juice in the fridge for a few hours to chill. Watermelon and mint are both very refreshing when juiced making them a perfect pairing on a hot summer’s day.
Summer and early autumn are the best seasons for this juice to be enjoyed.

Ingredients

  • 1/2 bunch Mint
  • 1/4 Watermelon
  • 1 Lime

Preparation

Mint
  • Remove the leaves from the woody stems
  • Juice leaves whole

Watermelon
  • Thinly slice the outer green skin leaving most of the white flesh intact
  • Cut the melon into slices about two fingers wide
  • Cut the slices in long strips about three fingers wide

Lime
  • Thinly slice off the outer green skin
  • Juice whole

Instructions

  • Close the cap on the juicer.
  • Drop the mint leaves in first to coat the inside of the strainer.
  • Juice the watermelon strips one at a time until the bowl is almost full. This mixes the juice well with the mint.
  • Release the cap.
  • Continue to juice the remaining watermelon strips with the cap open.
  • Finish with the whole peeled lime.
  • Tip: You can juice the green skin of the watermelon. It will save some time cutting it off. It does change the taste slightly and will make the juice colour go a darker red.

The light or the colour of fruits and vegetables can help us heal emotionally (think colour therapy) and the lessons the fruits, vegetables and leafy greens learn when growing get passed onto us, to help us, when we consume them.
