This juice is herbal medicine for the eyes and you only need to drink a small amount (150ml shot), to get the benefits. Lutein, a carotenoid that helps protect against eye diseases is found in both leafy green vegetables and carrots and the Beta-carotene found in carrots coverts to Vitamin A in your body for healthy bright eyes.
The taste is peppery and bitter with just enough sweetness (from the carrots) to be enjoyable.

Ingredients
  

  • 1 handful Parsley
  • 1 handful Spinach
  • 1 handful Rocket
  • 2 large Kale Leaves
  • 4 Carrots

Preparation

Parsley
  • Break a good handful of parsley from the bunch
  • Roughly chop
 
Rocket
  • Wash well to remove dirt and grit
  • No need to cut
 
Spinach
  • Wash well to remove dirt and grit
  • Roughly chop leaves, stems and roots if using
 
Kale
  • Roughly chop the leaves
 
Carrots
  • Cut carrots lengthwise
  • If larger carrots are used cut lengthwise again, into quarters

Instructions
 

  • Start by grabbing a handful of parsley, squeezing it into a small ball in your hand and then add the ball of parsley leaves to the juicer.
  • Then, do the same for the rocket and spinach adding one handful to the juicer.
  • Use the pusher if you need to but it is better to let the leaves fall into the press.
  • Next add the kale, one handful at a time.
  • Tip: to keep rocket leaves fresher for longer put them in the fridge wrapped in paper towel stored in a sealed container.
