The Broccoli in this juice adds a nice smooth texture without over balancing the flavour. It is crisp and clean, everything you want from a green juice. I like to make it at lunchtime because its high-water content keeps you hydrated in the middle of the day.

Ingredients

  • 2 Cucumbers
  • 1 head Broccoli
  • 2 stalks Celery
  • 5 Green Apples

Preparation

Cucumber
  • Cut into chunks to fit down the chute
  • Juice with skin on

Broccoli
  • Cut off the stem
  • Cut the stem into quarters lengthwise
  • Break the florets up into small chunks to fit into the wide chute

Celery
  • Chop into small thumb size pieces across the stalks (this shortens the long stringy cellulose fibre and stops it wrapping around the press)
  • You can juice celery leaves, however it will add bitterness, so discard if you don’t like it

Apple
  • Remove the stems and remove any stickers
  • Juice apples whole with skin and seeds.
  • Cut in half or quarters if too big to fit into the wide chute.

Instructions

  • Juice the cucumber first because they are the softest ingredient. Let the machine chew each piece before adding the next one.
  • Next, slowly add the broccoli, letting the machine grind through the hard stem and florets.
  • Now you can juice the celery one handful at a time, letting the machine chew through all the pieces. Finish with the whole apples to really push through all the ingredients.
  • Tip: juice the broccoli stems and eat the florets (lightly steam and sprinkle with soy sauce!). The stem is where you will get most juice and also find most of the nutrients.

There is more to every fruit, vegetable and leafy green than taste and flavour. Each one has a unique signature or a "sign from nature" indicating what part of the human body its nutrition targets. The light or the colour of fruits and vegetables can help us heal emotionally (think colour therapy) and the lessons the fruits, vegetables and leafy greens learn when growing get passed onto us, to help us, when we consume them.
